There are many bad Sonic games, nobody could deny this fact, but the few good ones are so absoilutely fantastic that the franchise still deserve and always will deserve a lot of respect no matter what.
The first Sonic game is so fantastic that even all alone on its own it would deserve all the popularity this franchise gets.
Every Mario Kart except the original and DS. Because the power ups are stupidly overpowered and the AIs always throw a damn blue shell on the last half of the last lap of the third race of the cup. Every. Damn. Time. In Double Dash, I had figured out precisely when, because they ruined so many of my attempts.
64. I actually did like this game. It has fantastic movement mechanics. It has some fun levels. And it has aged way better than most 90's 3D gamed. It just wasn't the great thing in the universe ever, or anywhere close to it.

Galaxy. I straight hated this game. I could never see where I was about to land, and would fall into a hole. Now, there weren't a ton of places where this was an issue, but where it was, it frustrated me way more than the rest of the game was worth. The other thing was the ball rolling gimmick--having to hold the remote vertically was difficult and/or uncomfortable when I was playing lying on my side on the sofa like a reasonable human does.
Now, on the topic of NSMB... These are totally just the same game over and over and over. To the point that I kinda wonder if the idea is, this one is for people who have never played a Mario game before, and only have this one system.
Now for an underrated Mario game. Mario is Missing! I found the game a lot of fun. It was chill af, and I learned about geography too. Plus, who didn't want to play as Luigi?
2, 3 &K, Adventure and Generations were killer though. Adventure 2 and 3D Blast were ok.
In my opinion Sonic 2 is really bad, and the first one is much better.
But I agree with you about Sonic 3&K and Generations, I like them a lot too.
My favourite Sonic games are Sonic 1, Sonic Unleashed (which is actually Sonic Adventure 3 in Japan) and Sonic 3&K

Level design and mechanics are the opposite of complicated. Swallow enemies and throw them as eggs. I'd say the platforming is moderately difficult on some levels, but Yoshi's gliding saves you in a lot of places. Even the final boss is just literally throwing eggs at him until he dies.
Story isn't complicated either. Stork delivering Mario and Luigi drops them. Yoshi's find Mario. Mario guides Yoshis to Luigi. The end.
Isn't apex part of titanfall trilogy but as a spinoff
