When games give me this option i usually like trading with them feels way more fun collecting the money to buy items. Just stealing might be fun too but it always feels like im missing something while doing it.

I could try to barter with an NPC and spend 2 minutes trying to haggle

However, the item is right there so I'll just take it

Depend the NPC.
If it's an ass and / or belong to a faction I don't like, well...swiggity swooty those goods are now my property.

If you buy from them they have magical gear, if you try to loot them, your lucky to find and iron dagger on the corpse.

I’m the type of nubba who buys from the NPC then after buying a gun I shoot him with that sold gun then I take my stuff back.

Depends on the game and how immersed I'm trying to be in the game. In Bethesda games I tend to try and give my characters their own moral compass and stay true to it.
