I've seen the back-end of restaurants in the US, too, and have known their owners and head chefs... It's not that much different, here, either. :)
Honestly... I think the professional, passionate, attitude and dedication to quality a lot of chefs/cooks have is pretty interesting. I'm not one of those people and don't understand that kind of devotion to preparing food. I don't comprehend people's enjoyment of "cooking shows" and the like, either. I "understand it," I just don't... grok it.

You kinda have to be for some positions. Nothing beats leaving over a grand of meat in a smoker that someone forgot to turn on for the overnight cook.
