Because, the old man is the primary "draw" for the audience in the movie and the young actress is using that role as a "vehicle" to gain notoriety and screen recognition.

And, then there's "♥♥♥ sells."

Nobody goes to see "old male actor" movies for "old people stories." They go to see the older male actor in that role in that story. For instance, most of Eastwoods past few movies are bogstandard "After School Special" morality plays and not actually "interesting or well done stories." And, predictably, they're filled with young actors nobody ever sees again and who probably didn't do a good job, since they're cheap... Yeah, I do realize I'm being harsh, but I'm trying to drive the point home regarding "old, cherished, actors" - Nobody cares about any of that because "Clint Eastwood." That's it. (I liked most of the older Eastwood flicks, though.)

♥♥♥♥♥♥ desirability is primarily focused on the... female. Sure, a man may be a "hunk" but "♥♥♥" resides on the other side of the equation for most people. (Even women who may look to the female character's reactions and behaviors to judge the situation more than the male character's.)

While that sort of cultural interpretation may have been perpetuated by male-dominated society, it's still a firm part of most of human culture. (I don't know where it isn't, but allow for the possibility.) When a movie wants to add a "♥♥♥♥ vibe" to it, they look for an attractive female in their ♥♥♥♥♥♥ prime. That is where it says they need to go on the casting sheet.

It's reported that some actors do disagree with that pairing. Roger Moore, of James Bond fame, retired in part, or in whole, because he felt that being paired with the much younger, overly sexualized, actresses was "creepy." He didn't want to do that, so he quit. (Reportedly, it was a big reason.)

Female leads do wonderful jobs and good ones do get a lot of draw value at the box office. Male leads still get the greater share, though, even if they ♥♥♥♥ as an "actor." Eventually, that will even out to balance point. It will not likely be equally weighted, though. At least, not in some foreseeable near-future.

Just an observation - He was also playing the part of a hyper-successful, powerful, rich, established, executive. She was playing as a character that wanted to be very desirable "executive-level-♥♥♥♥♥♥." Those sorts of highly paid escorts aren't typically past menopause.

That's another consideration, btw - "Menopause" is a thing. Men don't go through that, though their fires may ebb a bit and, well, ya gotta use a tool well for it to work well...

But, adults in the audience are very aware of presenting a female over a certain age as "in her ♥♥♥♥♥♥ prime." Some male leads may still have that appeal. It doesn't mean at all that an older woman can't be sexually attractive, it just means that there could be some additional issues to combat.

Right, an executive picking up on a prostitute; however, "A Perfect Murder," Douglas was more than twice as old as Paltrow lol.
Men are most attractive 30-40
Women are most attractive 20-30

Of course there are exceptions.

The "old men" stipulate "young actresses" in their retainment contracts. It's easier than the dating scene.
