I was correcting someone, they spelled it with a Z. I imagine Mayonnaise on a steak would be nasty.

Now a cold steak sandwich, that's a different story. Probably would prefer horseradish sauce there.

If it's cooked properly, then all the juices aren't cooked out. Well done can be great.
If someone is cooking them dry then they're doing it wrong.

That isn't what Au Jus means, Fajita Jim is wrong.

What he is referring to is called "Weep" or "Purge" it's water and myoglobin.

Sometimes you can't afford perfectly good and have to get what is on clearance. Sometimes you're tired and can't be bothered to do things "right".

To be honest, I'd prefer a plate of steak tips with ketchup.

If it's really dry or tough I'd put ketchup on it but usually just salt and pepper is enough for me.
