There are some conjuring/summoning spells that let you bring dead enemies back to serve you.

Gedonia has pretty decent necromancy so far, haven't really tested it too much yet
Dragon Age: Origins has a summoner mod called "Evocation" that has a necromancy tree
Age of Wonders 3 has an expansion that let's you run a kingdom of undead
Iratus: Lord of the Dead is a game that literally revolves around necromancy
Such a good game, wish Fable 2 was on steam
This is a somewhat complicated game, by the way, and may be tricky to complete, if you are new to games, and can only be played online, so you need to have a stable internet connection for it.
