It's fries , cheese and a relatively spicy gravy , the consistency and texture is different then gravy you'd put with meat like ground beef.

the cheese prepared for poutine is usually very chewy and moisty too.

Canada is free to do wacky things in that mostly tundra wasteland.

It's cheese curds over fires with a type of gravy. Not as good as standard chili cheese fries. Mostly because it takes extra work to get those curds to fully melt and living in an icy tundra makes melting harder, don't want to lose the igloo too.
