Perhaps because it pertains to its exponents.
It's more so that each term is the antiderivative of the previous term, so when you derive the whole thing, each term gets replaced by the previous one, and as n goes to infinity you end up always having a term to replace the one you lose; thus, the function is its own derivative. It's the same property of the exponential function, e^x. The derivative of a function a^x will be proportional to itself, more specifically it'll be itself times a certain constant, and e is defined to be the number such that this constant is exactly 1.
This is the link between e^x and this infinite polynomial. It makes it much more reasonable and much less coincidental that valuating the infinite polynomial at x=1 outputs e.

Then again most of this makes no sense for someone who doesn't know about derivatives beforehand, but I'd gladly explain explain the gist of it if anyone wants to know.

However, of course one may perceive this act as something to belittle their own intellect. Understand that this is not an instance of your example.
