And Gas Station Attendant Simulator is quite relaxing for some people. You night not see the appeal of it, or driving a truck across Europe, or directing air traffic, but a lot of people do, as a form of escapism. Same with games about farming, or building a city, or fishing.
And you have to understand, despite being a niche market, developers wouldn't make them if people didn't buy them.
Speaking of which, I could use a sequel to grass simulator. Add new guns and maybe explosives. What? It's a weird game.

Apparently the game devs think otherwise. As do the people who buy and like those games.
It must be a shocker to realise that other people like things you don't like or understand.
Before there were too many Crafting Survival Zombie games, and before that there were too many brown-tinted modern military shooters.
That's how trends work. Something goes trendy and devs try to make a product to try attract that userbase.
The good part of it happening on an online Store is it's irrelevant if there's 10, 1.000 or 10.000 similar games. None of those is taking shelf space from the games you like.
I've chilled out more than one evening playing Viscera Cleanup Detail...
I tried Viscera Cleanup once. It's the only game in 40 years of gaming that left me feeling motion sick. Haven't touched it since. It was not relaxing. >___>
I don't think there is another country on this planet where simulators sell like crazy.
