Parmesan, Mozerella, Cheddar, Feta and any cheese used in making Saganaki (the cheese they set on fire, it's a Greek thing).

asiago, gouda, fiore sardo, feta, pecorino, havarti, camembert, manchego, swiss, mozzarella (but who doesn't like that? :hee:) emm! lot.. altho best i like harder cheeses - but some softs are nice too.
