I've heard great things about Thief! I tried the demo of the remake. I liked the gameplay. It felt like just a good ol' fashioned stealth. BUT people seem pretty upset about it. I guess there's nothing wrong with playing the original, as dated as it looks. Invisible Inc was just on sale, ♥♥♥♥♥♥♥♥♥♥! But I like the look of it.

Most Bethesda ARPG's allow for a stealth based character creation. Fallouts you can have a stealth suit with sneak stats and stealth boy gadget. TES games you have magic and potions too stealth with plus a stat bulid. You got the assassins and thief guild in both Obllvion and Skyrim.
E.Y.E. you can create a stealth based character. Weird game, but one of my faves.
The Batman Arkham games are basically all about stealth and ambush.
AvP 2010 is a stealth orientated game when playing the Preadator and/or Alien campaign.
This War of Mine you can play it totally stealth and no combat.
State of Decay and Day Z I spended most of the time sneaking around in those too stay alive.
I was always a fan of Hitman: Blood Money for being able to patiently suss out the environment an observe all the different enemy behaviour and patrols before making the move on your target.
Also another vote for Batman Arkham Asylum and Arkham City.
I also recommend Splinter Cell: Chaos Theory. Assassin's Creed Chronicles builds on the gameplay of MotN and uses its 3D graphics in the stealth, though each game isn't as good as the previous one.
