There are many weirder in mythical beasts with ecological and dietary requirements that are utterly unsustainable.
The key point is this are fictional creations so you cannot expect realism to hold on deeper analysis.
With regards to Centaurs in particular, these were formed from early encounters with the expert horsemen of Scythia or Lapith of Thessaly. The mounted warrior Scyhians were so adept at combat and other feats on horseback that the legends of those that surived encounters rapidly grew to extremes of exaggeration combined with the maginative wits of the literate recorders of the times (i.e. Pindar)
The intention wasn't necessarily that there really were half-man half-horse, but the poetic vision of the capabilities, grace and mastery of the horseriders.
This becomes interesting when it comes to myth and legends.
You will always find it part/part, such as a mermaid is part human and part fish.
Therefore there's nothing really to disprove, rather just separate and work out upon.
1. They are a genetically modified hybrid of a human and horse using CRISPR to replace/edit human skeletal and muscle genes to give humans the legs of a horse
2. As a result of this genetic manipulation the “horse” part of the body is just bone, muscle and keratin (with some exceptions, see below) including the secondary rib cage (with the places where organs previously were being hollow)
3. All reproductive systems are still located on the “horse half” of the body
In a world of Paris Hiltons and the Kardashians, you, a lifeform almost entirely comprised of oxygen, carbon, hydrogen, nitrogen, calcium, and phosphorus are claiming that "Most mythological creatures don't make any sense", on the scale of wierd ♥♥♥♥ that exists on this planet, mythological creatures would be far from top of the list compared to what actually exists.
