Game mechanics being "not real" doesn't break immersion for me.
I felt pretty immersed in the first few Assassin's Creed games or Telltale's The Walking Dead, and they're third-person.
personly i use both , as you said you can get better cam angles depending the view .
Usually I tend to avoid first person games. I can play them if I like them enough but the gameplay is less fun this way.
Many third person games with a view close enough to the action can be very immersive too, and anyway I don'ìt want to become the character, I prefer to have a character to play with than being him myself.
Of course third person games with a far away, top down kind of view (for example) like Diablo struggle to be as immersive as games that let you experience the environment and locations from a much closer point of view.
And it depends on what I want too, sometimes I don't care much about immersiveness and I only want fun instead...
I could never get into GTA 5's first person view.

Normal shooters however i feel the character is in the way a little bit, def prefer 1st person view there.

Played d2 long time ago, third person view is a good thing for those types too...
It is [first person is more immersive] is a completely subjective argument. Arguing about which is better or more immersive is futile since there are no factual concrete evidence to prove the argument. Its all preference, regarding watch you like and what you find more immersive. FPS comes close to how we actually see in RL, but its hardly equal i.e. no real peripheral vision and from the view of a box [your screen]with your surroundings[room] in the background. So knock yourself out trying to prove either is superior. If were talking purely utilitarian advantages: I like being able to toggle between the two I wish all games had that option.
*side note I resisted getting Kingdom Come: Deliverance, since it was FP only. I finally got it on sale for dirt cheap a while back. I thought I was going to hate it since I get dizzy playing FP games. Surprisingly I did not and actually enjoyed the game immensely.
But third-person has some advantages when it comes to platforming and games where you need spatial awareness. Also it looks cooler.
I kind of like a mixture of the two. Try playing a game like Elder Scrolls or Fallout and test it for yourself.
I like option to change game mode though because sometime first person make me feeling queasy if I play too long. I find it better to adjust fov and play in darker room. xD
3rd person is fine for RTS games as you are typically commanding multiple units. For FPS games, it depends again, on who the devs are aiming their game at. ArmA isn't aimed at the general masses like Assassin's Creed or a Battlefield game is.
