Arx Fatalis is very similar. It's also a fairly old game, so aesthetically it's similar. There's a free demo on Steam if you want to try it out.
The Legend of Grimrock games are a modern take on oldschool RPGs and is sort of similar, but might not be what you're looking for. It plays different (uses a 90-degree rotation mechanic) and you have a party instead of playing a solo character.
The older Elder Scrolls: Morrowind is another one that you might enjoy.
As for Arx and Legend, I have not seen them, although I think I looked at the Arx page, but I think there was something about it I didn’t like but I don’t remember what. Might need to check it again.
What do you mean by 90 degree rotation movement? Meaning you can only move/look in a straight line in the cardinal directions?
I have morrowind but haven’t played much of it. My first TES game was oblivion back when it was new as I hadn’t heard of them before that, having been mostly console up till near that time. I just had a hard time getting into morrowind at the stat for some reason though, lol.
Edit: ah yes it was the “gesture based magic” that turned me off of Arx from the description. Everything else sounded good but I don’t like gesture magic, I have trouble memorizing them. I had trouble with them in Black and White, as well as one of the Myst games.
I feel you about Dark Souls. I didn't enjoy it very much, either.
If you're just looking for RPGs in general, the Divinity: Original Sin games are very popular. Star Wars: Knights of the Old Republic 1 and 2 are really great games and both are currently on sale at Fanatical.

Turn based combat is the bane of my existence however. If I can’t run around, dodge, dip, dive, duck, and dodge my way through combat it just doesn’t feel right to me 🤣
That’s why I never got into final fantasy tbh. I do have one of the newer ones that allows for real time combat though. I have most if not all the Star Wars games already except for a couple of the newer ea ones that were trash (looking evilly in Battlefront 1 and 2s online only direction) and maybe 1 or 2 of the old ones. They are fun but I’m in a medieval mood not a sci-fi mood :P
I’m sure morrowind is great, I love TES, it just feels so slow and overwhelming right at the beginning, lol. I’m having trouble getting through that bit. Mass effect is great, but not medieval like I am currently looking for. And yea I hate turn based so I won’t be playing those 2, but I’ll check the pages for the others you mentioned.
Edit: Divine divinity looks fun, but it isn't first person. Dragons dogma looks fun as well, but it isn't quite what I'm looking for, though I can't pinpoint what it is exactly about the screenies that tells me that, haha. Maybe its not retro enough? I'm kinda looking for pretty old stuff with like ps1 graphics, lol. Don't ask me why as even i don't know. just the mood I'm in. That said ill prolly still pick both of those up eventually, they do look fun for sure!
Grim dawn looks fun, but neither first person nor medieval, and the rogue-like dungeon mentioned in the description worries me, permadeath isn't my thing.

Morrowind is a masterpiece but it's not really what you're looking for.
Buy the portable and the cartridge or emulate the game, I don't really about your choice. Cheers!

I didn't read through the whole conversation above, but you have some specific requirements. What consist of grid vs turn based, I am not quite sure. So I hope there is something for you inside.
