The human brain understands this to be a good energy source and therefore craves it. It also contains calcium (best source is from milk, greek yogurt and various dairy) and vitamin D (best source is from natural sunlight), which if your body lacks in, will crave even more.
Adding some to your diet is actually good, but just don't overdo it. Cheese is a good fat, but can be over eaten. Consider why you crave it and mix it up a bit.
Certain food cravings can tell you a lot, some however get confused in what is the actual body requirement vs what it thinks it wants. For example: Craving salty foods such as chips and pretzels can be a sign of dehydration, when the thirst is being masked as hunger. If you have been drinking alcohol and then go grabbing for them like crazy, for example, it can help the cravings but not always the best way. Specially if that craving isn't fulfilled by it.
There are a million different cheeses and all taste differently, u gotta be more specific else i cannot answer this question properly.
I'm the same way with beef. Don't even cook the stuff, just cut off the horns and wipe it's ass and it's ready for the table.
