Good to know that I'm not the only one in this situation.
-Astroneer (Microsoft store version only).
-Aragami (there isn't a reliable way to pair with your friend, though the playerbase is small so it shouldn't be difficult)
-Wargroove
-Minecraft (windows 10 version)
-Crackdown 3
-Sea of Thieves
-Roblox
(games below I haven't played)
-State of Decay 2

Out of the ones listed I have personally enjoyed Deep Rock Galactic the most and thus I would recommend that one over the rest.
I would pass on Crackdown 3 unless you have Xbox game pass or if the game is dirt cheap. Sea of Thieves I would also hold out from although I would keep an eye on it since they have been adding a lot of actual content and there's a huge update coming at the end of April.
Wargroove has no official coop campaign but custom campaigns do exist, though me and my friend didn't find any coop focused ones.
Astroneer is pretty buggy though they may have fixed a lot of bugs now.
I heard the latest Gears of War was cross platform as well, but I don’t know for sure.
