GT is fanmade and noncanon, also much less focus on action.
Accepted fantheory is that GT is an alternate timeline to Super, though, if you feel like you wanna pretend it's somehow canon

On One Piece, I know a lot of people like it, but the super kidish art style just killed it for me within like 5 minutes of episode one.
Bleach starts out strong, but gets way worse after Soul Society arc and doesn't get better. Also, anime is pretty much unfinished because they stopped at Fullbringer arc due to the loss of popularity. Manga's ending was also pure garbage.
Fairy tale? You mean "old One Piece concept art" characters? Jokes aside, no idea if it's good or bad.
Dragon Ball, why not? Although I will admit that I completely lost interest after the fight with Frieza.
