What is Vo)) LTE?
It comes up on my mobile now when I've had this phone for 6 months and it's never come up before.

VO-LTE is the next generation of VOIP.

It indicates that VOLTE is enabled in your device and you will be able to call via LTE.

It stands for Voice Over Long Term Evolution.

It is a technology works with 4G/LTE.

The VOLTE calls are highly secured and thus can't be taped.

I see, would it have been my provider that recently upgraded their network which caused this to now appear? Or did I do something on my end to enable it?

The telecom standard, utilizing 4G/LTE network for simple voip. It makes our voice heard over the phone more clear and phone calls secured. Other thing is not so much different from normal LTE.
