DuckTales Remastered also has different difficulty settings.
I haven't played Treasure Adventure World, but I have played Treasure Adventure Game, which is freeware on GOG.
This has a pretty gradual difficulty curve.
This is pretty quick and has difficulty settings.
Sonic Generations (it has both 2D and 3D stages)
Sonic 1 (using saves it is not that hard)

The Megaman collections are nice, but with the rewind and ♥♥♥♥, "difficulty" isn't even applicable.
Commander Keen is classics, but a bit brutal at times.
