Because it ruins the steak and turns it into a dried tasteless piece of meat instead of a juicy bloody piece of meat with lots of flavour.

As a steak snob, I will say there is no "well done steak", only "oh my god what have you done to that steak".

But I still hang out with steak non-snobs and if I get an "oh my god" steak I will still eat it without complaints.

I'm a medium rare steaker in general tho.

Because the rarer the steak the tastier it is.
Then again there are people that prefer it well done, so I dunno

I see you're a man of sophisticated taste like myself, although if my steak turned up looking like a leather wallet, I will ask for another, I do not eat peasant food.

On a serious note, I have heard waiters over cook steaks on purpose because if you refuse to eat it, they can eat it in the kitchen whereas if your steak was under cooked, they can easily put it back on the grill.

It’s not just steak snobs, nobody likes a well done steak. It just becomes a tough, rubbery, tasteless slab of meat that has no right to call itself food.

Because you can burn steak and buy it at a cheap place for $6. Why spend $50 on burnt steak? You can't really judge the meat on burnt steak because literally all burnt well done steak literally tastes the same. If you try medium rare at 2 different restaraunts one cheap one expensive, you can taste the difference in quality especially how the chef prepares with either too much salt or any spices at all.

To be on the very far spectrum to look at this, you should look at fish in a similar light. Grilled fish at any establishment tastes similar if not the same unless the spices are different, but even so the meat on the inside all tastes the same. Then take sashimi and try it at both a cheap place and an expensive one. Hint: you'll taste freezer burn from the cheap place, but I'm pretty sure you wouldn't have tasted the freezer burn on grilled fish.

Well done is fine if the steak is ♥♥♥♥, but if it isn't ♥♥♥♥ then it's a waste to cook it well done

Depends on the place.
Some places well done steaks are still juicy while others are dry and burnt.

I could care less if they gave me a rare steak when I asked for well done. It's not like they charge me on how it is cooked.

I don't know what a restaurant gets for a well done filet, but it should be 5 to 10 years. =)
