I'm a simple forum user. I see a question, I answer it.
But I still hang out with steak non-snobs and if I get an "oh my god" steak I will still eat it without complaints.
I'm a medium rare steaker in general tho.
Then again there are people that prefer it well done, so I dunno
On a serious note, I have heard waiters over cook steaks on purpose because if you refuse to eat it, they can eat it in the kitchen whereas if your steak was under cooked, they can easily put it back on the grill.
To be on the very far spectrum to look at this, you should look at fish in a similar light. Grilled fish at any establishment tastes similar if not the same unless the spices are different, but even so the meat on the inside all tastes the same. Then take sashimi and try it at both a cheap place and an expensive one. Hint: you'll taste freezer burn from the cheap place, but I'm pretty sure you wouldn't have tasted the freezer burn on grilled fish.

Some places well done steaks are still juicy while others are dry and burnt.
I could care less if they gave me a rare steak when I asked for well done. It's not like they charge me on how it is cooked.
