Another game but you'll have to wait some time is Stardew Valley, the developer is about to put up the multiplayer part and you can farm together. If you're familiar with Harvest Moon, this is something you should look out for. Theres also another "farm" game, but still in early access, can't remember the name though. It's not just about farming a few crops in this game, it also hajs a story, pretty good characters and several tasks to do, alongside with seasonal (ingame) events.
Keep in mind she might not like PC gaming at all after a while, my partner did not and it's hard to convince someone spending time into this, most think it is a waste of time after all, though alot of hobbies are, so.....

The name of the game is A tale of two brothers, I think
Now I don't do multiplayer and not a whole lot of shooters, but Borderlands is probably the same as in singleplayer -- and it's certainly fun, not taking itself too seriously.
PS. I never played "Everquest" but one of my fondest memories growing up was World of Warcraft Vanilla to Cataclysm so I can appreciate old school MMORPG too.
