Why "vanilla"?
Whenever we speaking about something unmodified or untouched, we call it "vanilla".
Why exactly? There's a source port project for Doom, called Chocolate Doom because it's a slightly modified version of Doom to work on newer systems.

And because vanilla icecream is bare-bones and standard ice cream

OH! You meant in gaming. I mean, in the example you provided. Wouldn't the term be OG? Since it's a port. Not really a mod persay.

Vanilla is considerably the simplest form of ice cream due to the fact it requires the least ingredients & how almost everyone can create it.

In video games, Vanilla is carried out in the same way, where it's basically the smallest amounts of "ingredients", where mods would add things like caramel, chocolate, etc. into the mix, making it more complex than what was before.
