If I burnt a pot steaming spinach, are any of the metals in the spinach?
Is my Spinach toxic because I left the stove on and the water evaporated?

i hate cold spinach, so i always overcook it
Popeye eats it right from the can. I guess it's better that way.

Depends what the pot is made of...

Non-stick pans coated in 'Teflon' do release toxic fumes when heated to between 300-450C, causing flu-like symptoms. That's 572-842F. So would need to be pretty extremely burnt.

Stainless-steel cookware does not get treated by chemicals. If you burn a stainless-steel pot or pan dry, it will still be safe to cook with as long as you clean it well. Just clean it out, add some vinegar and water into it and boil, then reduce heat and simmer for 10 mins. Remove from heat and leave to cool overnight, gentle scrubbing and it should return to brand new.
