Dungeon Crawl Stone Soup[crawl.develz.org] minus the crafting aspect, very good skill leveling and upgrading systems. nothing else really comes close to dcss & skyrim skill training systems though, so don't have any recommendations with similar and crafting.

Slay the spire might be really good. Northerlion just made episode 100 of playing it.

If you liked Skyrim, then you'll definitely like other ES games and also Fallout games from the same company. Kingdoms of Amalur: Reckoning is good as well, although that game has serious balance issues.

Dragon Age Inquisition and Mass Effect: Andromeda are also great, in my opinion, but A) many people disagree, and B) they are better played after having gone through the previous games in the series, and those games aren't open world.

You know what? I was asking myself the very same question that led me here. I tried Shoud of the Avatar, but it's a big and tedious grinding. I ended up reinstalling Two-Worlds II, If you haven't tried it and not afraid of older graphics it definitely scratch my crafting gear itch

I would have mentioned Deus Ex but it seems like you already played that one.

Why???? They didn't mention Deus Ex.
I thought of writing a comment talking about Deus Ex but then I thought to check his game library first and he has 44 hours in Human Revolution so it would be just wasted effort :D

Ohhhh.
Indeed good sir. Ohh indeed.

If you didn't play Morrowind / Oblivion you might enjoy those. They are both dated games but if you can get over that then you'll find yourself in a pretty cool RPG world filled with stuff to do. Oblivion is similar to Skyrim in many ways (but it has deeper RPG mechanics like a class system) while Morrowind is quite different (it's more like a tabletop RPG), and even more dated.
