You start as a nobody and can eventually become a noble, and if you choose to join politics you can become Emperor or some ♥♥♥♥. (I forget what the highest rank in politics is, it depends on the town size.)

You play the familiy instead of a single person. You can begin as count and rise (conquer, assasinate, marry, etc). The game ends when your bloodline ends.
While you play someone who has lost considerable power, when you start you are weak and vulnerable and not only will you have to slowly rise and power but also in rank with one of the factions you can join.
I'd also recommend CK2. You can start as a lowly Count and through military conquest, assassination, seduction, or utilization of religious mechanics, you can rise from a Count to a King, or even an Emperor. Count is about as low as you can get though, whereas Emperor is the highest you can get. Your initial character might not get the rise in rank, but his or her son / daughter might, and so forth. You really play as a Dynasty of characters in CK2, witch each new heir inheriting your older characters primary holdings and lands.

Kingdom Come Deliverance not played much. Seems that type of rise through the ranks system. NPC react badly if you are even smelly and dirty.
