The Guild 2 lets you play as a merchant in various trades.
Also The Sims Medieval gives you the option to play as a merchant, but also a blacksmith and others. It's really fun.
But that game is dead.... soooo yeah
I also will say most Space games tend to have a merchant / trader option, for example, "Rebel Galaxy" offers trader centric missions and ships (larger cargo space) and games like Egosoft's X-Series incorporate an entire economy in-game for traders to work with. But they're both space games, and X-games are notoriously hard to learn (Rebel Galaxy is easy-ish tho).
