In a more serious way, I don't think you'll be very successful. Are you expecting to barter enemies to death?
Think of stuff like Fallout or Elder Scrolls where barter can net you some of the best equipment or net increased rewards.
Also most MMOs with a player-driven economy could count. Star Wars Galaxies was a perfect example where you could legit spend your entire time playing the game, running a virtual store that sold whatever you wanted to players.
In terms of fighting. A true merchant would just pay people to fight for him/her. :P
Kenshi is a good one and yeah I could definitely see how Mount and Blade could work.
Peak commerce is killing your customers to get items in exchange.

Edit: Ive bene playing Weed Shop 2 lately. You own a shop, you grow, you upgrade, you sell, promote, beat thieves with a bat, etc.
Its not the most finely crafted game, but it a time eater.
