Why they didnt use guns in Harry potter last two movies?

They could had used mind controlling spells on some soldiers, take them to the wizard world and mask them as wizards. Theres not even one wizard who is fast enough to cast shielding spell against bullets.

Hell, they could had used some control spells for guns, so they could compensate for the lack of accuracy.

Unfortunately he can't use the money outside the wizard world where it's worth nothing and all them sell are wands and potions and books and junk used in potions and rats, toads or anything them can find in the wild as pets. One of the teachers was a drunk. The graduation has only one career option to work for the ministry of magic. Hagrid was expelled and still hired and allowed to use magic. There's no guns for sale and them have no money because the wizard world is a banana republic where all uses galleons and no currency is traded since that would expose them to the muggle world.

They can? When they used defense spells against guns?

They never fought against guns, therefore we can never know who would win. But i would imagine that the reason why they don’t use guns is because of what i stated. The wizards aren’t dumb, so if guns were better than wands, then they would use guns. But since they don’t, there must be a reason why.
