When it comes to Doom maps, there are too many to recommend. I would suggest looking for community projects and Doom Worlds yearly Cacowards for maps. You can also look at a YT channel call ICARUSLIV3S if you want more Doom wad recommendations.
Edit: since the guy above beat me to most of the mods. I'll mention I combo of mods I like to use that make for what I think is a fun experience.
-Legendoom: adds "legendary monsters" which drop unique weapons.
-Colourful Hell: adds tons of new monsters, though it can bump up the difficulty greatly.
If you combine this with Doom RL or Lithium, you can basically turn Doom into a "looter shooter" of sorts.
If you want to take it a step further, you can download a tool called Oblige which generates Doom maps for you. (doesn't beat handcrafted maps though).
