If you have the space and audio card for it, go with the 5.1 Surround Sound system.
2.1 is great for smaller rooms and less space. I personally use 2.1 for general use and gaming.
On the 5.1 setup. Some audio cards carry the stereo mix through to your HT via optical cable...so at least that part of it can be deligated to a single cable.
I own a Soundblaster ZX audio card and have it linked up to my Sony BDV-E580.
You are correct though. For general desk gaming 2.1 is an easier/better choice.
