I have heard of the game but I am a bit holding back since many people report that the combat system is too complex. I am also not big fan of melee or sword fighting in general. In Skyrim it was okay because it was kept simple. It was actually the archery and bonus damage multipliers what made me love the combat in Skyrim.
On a few side notes:
I highly recommend trying a Fallout game. I was also not into guns etc., and had played all these medieval games since I was little. Last year I tried Fallout 4 and then did a majority of Fallout New Vegas, Fallout 1 completely and a solid chunk of Fallout 3 and had really good times exploring those worlds and playing differently. By extending and trying out these games I have found so many different games I enjoy.
I actually just started a full melee run of Fallout 4 recently and there is a good amount of melee gear and customization.
On another note, you could try Grim Dawn.

It is an ARPG and your character starts off as a nobody who was simply attacked by the enemies in it and survived. It is simple and you only need to use a few attacks here and there. Very simple and smooth game play with the mouse and a few key buttons used.
In Fallout New Vegas you start off as a random guy who gets shot in the head and survives too lol
Archery on the other hand, is difficult sometimes even if you know what you're doing.
Hitting a stationary target is easy enough but you won't do so well hitting a moving one, its not impossible, just difficult.
Furthermore if you like Archery then you should really check out the game "Dragon's Dogma: Dark Arisen". Archery has never felt so power as it is in that game, there are tons of skills that go with it, buffs and damage multipliers, the combat is fast-paced and later on you can shoot 5 hours at once which further goes up to 10 arrows.
Your characters are not really "nobody" but are not "chosen one" either. Good combat. Super great story. Looked pretty nice too back in '93 :) IMHO still stands up to too many modern games in the RPG bucket.

No one knows who you are, you don't look, or act like a legendary hero, everybody pretty much considers you a wimp. Thanks for the suggestion, though, I'll definitely check it out.
Besides that I've heard about Dungeon Siege, and the early ES games like Arena, dunno enough about Daggerfall but I do know that in Arena you're just some prisoner and unlike the other games you aren't prophecized at all, you just become really f*cking powerful on your own and end up taking down the villain.
you can have swords,shields and guns but it's up to you what to choose
it's a piranha bytes game so expect to get swallow,chew and spit in the beginning
(tips: don't join a faction too soon or you will have abilities that will reduce the difficulty of the battles and i don't know if it locked some quests based on your faction)
