potatoes are great but not as great as carrots, they are the king of root vegetables.

I've been vegan most of my life. I used to be vegetarian from age 4 or 5 when I learned what meat actually is and where it comes from, growing up around farms, playing and visiting animals most days to see them suddenly disappear made me never want to eat an animal. I went vegan when I dropped dairy and other animal products.

Lots. Mainly how hidden a lot of none vegan ingredients in food are. It means I have to check everything I buy and have a mental record of every E number that has animal origins, its a pain in the butt. But thankfully lots of food gets labeled as vegan now. Ofcourse I can just stick to buying fresh produce and making everything from scratch but sometimes I don't have time for it.
