8GB RAM enough for gaming?

Depends on the titles you plan on playing and depends on the type of RAM. While 8Gb DDR3 is more than enough for most games but there are a handfull of games that benefit from extra RAM such as Battlefield 1.

Depends on the game/games and how many background stuff u have open while playing.

You'll be fine.
I recommend upgrading to 16GB when you're able though.

8Gb is enough for those. But keep in mind that games are getting more and more demanding. I'd reccomend upgrading when possible. RAM sticks are pretty cheap.

Also if you go to Win 10 I have heard it sucks memory like crazy.

If you're talking about Cortana, that has been fixed. W10 is better optimized than W7.

8GB is enough for medium/high settings on most games, but some games require more than 8GB to play on higher settings or even run (Quantum Break).

for most games, but 16 for nearly everything.
I've been using 8GB for a couple of years and rarely find a game i can't run very well.
You probably won't be needing any more than that for a good while.
