List all of the "good" games you can think of with bullet time mechanics!
Games like battlefield, arma, h1z1, tabz, rust.. are the ones that I can just think of off the top of my head.. doesn't even have to be realistic, I just love shooting games that have bullet trajectories and bullet time, sometimes it can be even more fun if the bullets travel slower than what's realistic :)

I think you're using bullet time wrong, don't you mean bullet drop physics?

Because bullet time is where you can slow time down and the other just adds realistic bullet drop physics to games.

For what fits your description, I'd say to try one of the Sniper Ghost Warrior games.

I believe so, these games try their best to be accurate sniper simulators in a way. With both added bullet drop and it also adds resistance to the bullet if it's windy in the game while you're playing.

Stranglehold.
Bullet Storm
Call of Juarez

And while it isn't technically bullet time, MGS5 and the Batman franchise have great melee slow motion takedowns I just love.
