For more ARPG's ( More fighting, less RPG ) the Souls series with their difficult but fair difficulty is one of the best you can go, just try to ignore Dark Souls II, it's not so good.

All of the Fallout games have been highly rated in their own way, but a general consensus is that Fallout 4 is the worst.
All of the Elder Scrolls game are also highly rated, however the ones before Oblivions graphics are very old. Skyrim is easiest to get into, Oblivion is "the best" to the long time fans.
All three Witcher games are very good in my opinion, and I'd say that all 3 have had a major impact in some way to the gaming industry.
Dragon Age:Origins is also one of my favorite "oldie but Goldie" games.
Dishonered was very highly rated.
Telltale games The Walking Dead, and The Wolf Among Us are very highly rated, however people think of them more as storybooks then games. (You do have some impact on how the story goes though.)
I enjoyed the Far Cry series very much, and I think it could've been Half-Life popular if Half-Life had not come out.
Other people have already named some pretty popular games for their respective genres so I'll try to cover some that haven't been mentioned much yet.
If you're interested in JRPGs, the best ones on PC right now are probably The Legend of Heroes: Trails in the Sky, Valkyria Chronicles, and one or more of the Tales of games (Tales of Symphonia and Tales of Berseria particularly). There's also the Final Fantasy games which are probably more famous but the PC versions of the more classic games seem to be a little eh for series veterans. JRPGs have traditionally been a console/handheld thing rather than a PC thing but in recent years publishers have discovered that there's a very ripe market for them on PC. For some lesser-known games try Grandia II (a port of a PS2 game I think) and Pier Solar (an original game by an indie (independent) devteam released for Genesis last decade).
For a more quirky take on JRPGs, try the game that put Japanese indie games on Steam's radar -- Recettear: an Item Shop's Tale. It's an item shop sim combined with dungeon-crawling action RPG elements. By action RPG elements I mean move your character around and press buttons to attack and use special techniques sort of thing, in real time.
If you're specifically interested in that action RPG experience, I suggest the Ys series. They're known for being difficult but very enjoyable. If you need a starting point I suggest Ys: the Oath in Felghana, though Origin is my favorite.
(Note: It may be useful to distinguish between "action JRPGs" and "action WRPGs". The latter include games like Diablo and Torchlight and are usually characterized by real-time combat but controlled by clicking the mouse to move your character toward where you click and clicking to attack things. Also they tend to have a huge variety of loot and character build options, while action JRPGs often have less varied build options and loot but more emphasis on a streamlined experience. And usually better music in my opinion.)
If you're interested in 2D platformers, there's quite a variety out there.
* The first one that comes to mind is Freedom Planet, which feels like a Sonic game but way better, with multiple playable characters and playstyles and a story with the flair and free spirit of a classic action cartoon.
* For 2D but not quite a platformer because you're actually swimming around most of the time...Aquaria. About ten years old now but still very well-regarded; you explore the ocean around you and a story unfolds as you do. Lushly detailed and accompanied by a memorable soundtrack. One of the devs of this game later worked on...
* Spelunky, a 2D platformer characterized as a "roguelike" -- a game with procedurally generated levels that are different every time, and if you die in your attempt to conquer the whole dungeon, you have to start all over. Sounds frustrating but it's actually a fresh experience every time and lots of fun -- even dying in strange and creative ways can be hilarious.
* If you're specifically into difficult platforming, there's Super Meat Boy.
* If you want a little...well, something unexpected in your game, consider Eversion.
* If you want something that's really brilliantly stylishly Mexican yet also a solid and exciting game, there's Guacamelee! (the Super Turbo Championship Edition is the newest version).
* For a famous game whose main mechanic is flipping gravity rather than jumping, VVVVVV (that's the letter V six times).
* For a game with an infinite number of worlds to explore extensively, gather resources from, customizable, and overcome challenges in, there's Terraria. It's sometimes called "2D Minecraft".
* And if you like to play Indiana Jones solving crazy ancient riddles and near-death (or often, outright death) experiences within an immense set of ancient ruins, La-Mulana.
If you're into shmups (a.k.a. shoot-em-ups, basically games where you fly a plane and shoot at targets while avoiding the bullets they send your way), the most famous ones on Steam are Ikaruga (polarity shmup), Mushihimesama, the Raiden games (more classic style of shmup), and DoDonPachi. Shmups are a bit of a niche genre but at least these are the most famous ones within the shmup-playing community. Slightly less famous but still well-regarded are the Alltynex games -- RefleX, Alltynex Second, and Kamui. The shmup scene is still largely dominated by Japanese games, but some western shmups have gotten notice, such as Jamestown.

Shogun 2: Total War is considered by most people I ask to be the best Total War game. Though I personally prefer Medieval 2: Total War, especially with mods.

Baldur's Gate is an CRPG based on one of the first role-playing games ever made. Long story short: without Advanced Dungeons & Dragons fantasy video-games would look and play very VERY differently. Anyway, this game is based on both the mechanics of AD&D, as well as one of the main settings: the Forgotten Realms.

Like Baldur's Gate, King of Dragon Pass is based on one of the first role-playing games ever created. This time Rune Quest. Unlike Baldur's Gate, though, King of Dragon Pass is a management/strategy game of sorts, and is more focused on the setting than the mechanics. (I don't believe Rune Quest pen-and-paper was ever turned into a video-game)

Amnesia: Dark Descent sort of start the whole "First Person Survival Games" phase of gaming. If you're going to play any first-person horror game, it should be this one.
