Pretty much any of the music from the Mass Effect series. All quite epic in scope.

The Metal Gear franchise. I have always loved the music, especially the outstanding opening themes. I would normally pick Snake Eater, but this is probably one of the best cover tracks ever.

"Neverwinter Nights 2: Mask of the Betrayer" had some pretty boss themes. Notably "The Faceless Man" and "Wells of Lurue: Combat"

Neverwinter Nights 2 was generally Meh, but at least it was back when Bioware wasn't a subsidiary, allowed mod support, let Obsidian do the storywriting, and made true RPGs instead of Perkslasher dating simulators.
