Unfortunately japanese studios are paralleling their western counterparts. They are tailoring their products for the global audience in increasing amounts. Resulting in very generic products that most anyone in the world can relate to. The problem being that certain stories, art styles, and so forth aren't being recycled, because the studios don't think they have a place in a global market.
Basically there is a lot of stuff they were doing ten, fifteen, or twenty years ago that they are not doing now, and a lot of what they were doing back then is still jaw dropping today. There is a lot to be disappointed with in current anime. Specifically the assembly line mentality that is taking hold. Not only has a lot of charm been sucked out of the current offerings, but there is a lot of abuse when it comes to computer rendering.
Just do yourself a favor and watch a movie like Ninja Scroll.
Unfortunately, the anime adaption goes to ♥♥♥♥ in the middle of the series. So you might want to read the manga instead.
