Than the video you should be looking for are first look/quick look not lets play. You are literally looking at the wrong videos for information.
I've had to stream a game for a friend of mine before. Staying 100% on top of communication, making sure that the stream is still okay, and staying 100% on the game, all at the same time, can be an exhausting thing. Doing this for 8 hours a day every weekday is likely something that isn't sustainable for a lot of people, so instead they let themselves relax and be a bit preoccupied with the chat.
For a streamer... Chat interaction, as well as keeping things entertaining (whether keeping a personality or making jokes, etc.), is more important than doing well in a game.
Plus, even though it's "frustrating" to watch, the badness does give extra entertainment in general.
Some of them also do it intentionally as an act.

It isn't always that way, though. Some streamers are streamers because they're extraordinarily good at the game. These people typically focus more on the game and less on being "entertaining" because their achievement/gameplay is generally the entertainment. But someone who is less skilled but have a more fun personality is almost always the more popular streamer.
This is why "DarklyPlays", despite getting the Soulless 4 FC first, he currently has 300k views, meanwhile Acai, 1 year later when he got Soulless 4 FC, now has 1.2M views. Both are extraordinarily skilled at what they do. But Acai is more "fun" in the eyes of various people due to his personality. (And yet both of his videos of playing the song "Flamingo" got more than twice the amount of views.)
