safe way to make ground/minced beef into rare style burgers?
whenever you grind/mince beef, the bacteria on the surface of the meat that can't penetrate the muscle and go into the centre (which is why beef can be eaten rare style) mixes in with the clean inside muscle, so it's pretty much contaminated and cooking it rare makes it practically unsafe, depending on how much luck god bestows upon you.

what if you sear the meat before you grind it down though? like cook it for a few second untill the surface is clean of any bacteria, so preferebly on a very high heat so it doesn't cook the insides, then put it into the grinder? that should solve the issue of any uncleanness, and you can touch the meat without having to worry about cross contamination from any source. from there, you can shape your burgers however you want and cook them as rare as you fancy, without the unneeded risk. and if you want, you can cut off the seared layer of beef, before grinding it down too.

your thoughts?

I feel like you have a strange apprehension regarding beef contaminants. Just grind it up and cook it.

but you can't just cook it rare because then you could get e coli

and rare is best way to serve beef, or so i've been told.
If you are going to make rare burgers good like with that. They will fall apart and become crumbs not a burger.

Yes. Raw and undercooked meat may contain harmful bacteria. USDA recommends not eating or tasting raw or undercooked ground beef. To be sure all bacteria are destroyed, cook meat loaf, meatballs, and hamburgers to a safe minimum internal temperature of 160 °F (71.1 °C). Use a food thermometer to check that they have reached a safe internal temperature.

Are there people who are more at risk from eating ground beef that is undercooked or mishandled?
The very young, the very old, and those with immune systems that have been weakened by cancer, kidney disease, and other illnesses are most at risk and vulnerable to illnesses associated with contaminated food. The symptoms of foodborne illness — such as diarrhea or vomiting, which can cause dehydration — can be very serious. Safe food handling practices at home or anywhere food is served is especially important for those in the "at-risk" group.

as in not cooked all the way through.

only the surface of beef steak is raw, bacteria cannot penetrate the inside muscle of a beef steak and it's perfectly acceptable to eat it rare/medium rare

but rare is the correct term

as in you cook the outside to a safe degree, while keeping the insides unthoroughly cooked

As i posted the internal temp has to be 160 °F (71.1 °C) to be safe to consume.
I used to work as a cook for applebees back in the day so i know what i'm talking about.

Cow has to hit 145, pork 160, chicken 165.
