I also watch matches in wrestling empire and you can watch a football game in mutant league football.
That's fun to watch I think if this is the case that the game has it because the game's pretty comprehensive and ... um... It's got nukes.

You are looking for games with Spectator Modes:
Pretty much every decent strategy game has these and are more common in older games than newer. Sometimes a DIY spectator mode can be made by creating an an online game and populating it with only computer-controlled players.
iirc, rFactor comes with spectator races, but I'm not sure:

Sports games, and by extend shooters? I'm not sure, as they are designed to be played against one another. But some older games switch to demo matches when left untouched long enough as some kind of screensaver.
I think some custom scenarios/game modes from ArmA 3 could entertain you, but they might be too scripted as well. Maybe something like Warmachine:

Again, your best bet is looking for multiplayer games that allow matches to be only populated by A.I. and have spectators.
Now that you mention that. I believe something like TF2, team fortress 2 has this option like to go spectator and in like bot matches, or empty servers populated with bots you can do this.
I remember watching that way back and thought like that it was impressive what the AI were doing how they were playing I believe CTF, capture the flag mode together, against each other, team wise.
Yup, I think all source shooters have this. Quake, Unreal Tournament and Cube I think, too. Basically, the boomer shooters.

There's quite literally an "observe mode" where you can watch the AI just battle it out over and over. It's a huge part of learning how the game works, and the developers use it to make balance decisions.
