Two likely incorrect yet enjoyabe games spring to mind regards to your question:
Ive been playing War in The North, recently.
An old lord of the rings hack and slash.
I dont think its exactly what you are thinking of, and tbh it wasnt actually what I thought it was when I started playing lol.
But it is naturally fantasy, has crossbows, different swords, armour etc - Also co op and its really great fun suprisingly, if a little basic compared to modern games but hey its hack and slash.

The only other hack and slash I can think of atm where you specifically play as a roman, and that also has co op is Ryse son of rome.
The campaign is ok and semi expected but it has a cool online arena battle mode against npc with fatalities etc - you and another player which is quite cool.
Its quite a pretty looking game on a decent rig, but it isnt old:

Those are very similar games. Well, if no one will be able to find the game I have in mind, at least there will be a lot of similar games that I might try since I never played them.
Iron Phoenix, I will definitely check some gameplays of Ryse and War In The North even if I'm sure it's not what I was looking for. I'm glad you guys are interested in this thread.
I'm starting to think that the game I'm looking for is some really rare and forgotten stuff. It was a game from a cd which was basically a compilation of demos.
It has been recently ported to Steam.(Glorious 4K 60 fps)

there are 2 other games i can think of. Die by the sword and Blade the edge of darkness.
Wish I could remember it. I knew there was XS, a shooter, that was the same style perhaps the developer of it made the medieval one?

I dont know if they were multiplayer, but they almost look like early beta for Ryse son of rome tbh
