Don't try to be too similar to Undertale, you'll most likely end up with a much better game if you use your own ideas in the game.
for story most people like to progress the story as they go even for rpgs, and in a way that will fit the game and that wouldn't be hard to make
try to make sure there are no plot holes. easter eggs work well if you go for an UT style game.
