Remake and remaster mostly means better graphic than old version of the game.
a remake/remaster mostly mean the same, usually an old game with modern/better graphics
deluxe usually indicates that you get some extra content along with the base game vanilla purchasers wont get.
definitive usually means the base game but with improved graphics and with all the updates the game had.
and GOTY means it won an award and you get the main game and its DLC in one package.
Reboot - Something completely new, but I get shivers just from hearing it. DmC... ugh...
Ultra, Definitive, Deluxe, Ultimate, Special, GOTY, Arcade edition - re-released game with extra content
Reboot = A revival of a series but with an altered plot and/or gameplay. i.e. Prey.
Remake = The same game remade from scratch. i.e. Black mesa.
Remaster = The same game but slightly improved, usually with better options. i.e. Skyrim special edition.
Definitive, deluxe, ultimate and Goty are all the same from what I've seen. A complete package of all the games content, sometimes with extra content.
The definitions can be kind of loose but this is what I think they mean based on what i've seen.

remake = doesn't change the story, but significantly changes the gameplay.
remaster = doesn't change the story or gameplay significantly, but just updates the look.
definitive edition = the final verison of the game, or the version that has the complete set of extras (e.g. DLC)
deluxe edition = a version of the game with some extras (e.g. DLC, artbook, soundtrack, etc.)
ultimate = see definitive and deluxe for possible definitions
game of the year = a version of the game that includes all DLCs.
the last four are a little interchangeable and not clearly differentiated sometimes.

Reboot = The restart of a franchise with less substance and more modern garbage tossed in to milk nostalgia dollars. Usually significantly worse than any original.
Remake = The game equivalent of a unicorn with the power to seduce sexy mates to your whim that come bearing Mountain Dew. That is, what pretty much everyone wants and nobody gets, save in cases where they eventually wake up and realize it was a dream. Those old games vanish, never to reappear.
Remaster = Often erroneously believed to be an effort to touch up a game with finer qualities, the word is actually derived from a sarcastic interpreation of a term meaning "mentally handicapped" also beginning with "re." The comparison is drawn when one looks at work that modders do for free; much akin to original Michaelangelos juxtapositioned with fifth-grade art students restoring the Sistine Chapel. After they dropped bugs in the paint just for fun.
Deluxe Edition = An archaic term that once referred to a game and any sequels or spin-offs being included in a bargain bundle years after release. Modern usage tends to refer to a game that already included everything, but all additional content was locked behind a magical door that could only be opened by keys made of money. May or may not come with swag in an initial purchase.
Ultimate Edition = For when Deluxe isn't "extreme" enough to attract buyers, any Ultimate edition is seriously the last of this game you will ever see for about five years before it is re-released again. Variations include anything specific to the game itself, like "Emperor Edition," "Quest Edition," Galaxy Edition," and probably "Fanservice Edition" knowing some of these ****in' games.
GOTY Edition = Only games and the most trustworthy used car dealerships can print coveted acclaims like these on their all-inclusive discounted wares. They let a consumer know that somebody, somewhere, voted and declared theirs to be the best product of at least one year. Much like the welcome labels on foodstuffs or medicine, consumers can be reassured that between 100 to 51% of a product is probably quality material, or at least not crap.

A reboot throws out all the established canon, while keeping the defining charistaristics of the franchise, like the gameplay or the main character(s).
Remake means upgrade but adds brand new contents
definitive, deluxe, ultimate and game of the year edition means re-released but entire stuff...full game+all dlc's
