i had a cheap psu(xion powerreal 1000w) and it actually blew a capacitor and shot sparks out the side of my pc case and i was terrified that it had destroyed the $1100 worth of parts attached to it(luckily nothing was hurt). needless to say after having a panic attack i vowed to never purchase a cpu that isnt 80+ bronze rated or better.
well that depends on the case , if you can route cables away were you don't see them it wouldn't matter , if you have a case where you will see the cables modular is a good way to go since you would only have to use the cables you need.
mine is modular , but i could have easy enough went with a non modular one since all my cables are running behind the back plate on my enermax ostrog , so you won't see any cables anyways.

I have a 1250w OCZ ZX series 80 Plus Gold PSU, it is good so far after over 1 year. I think OCZ does make a lot of good fully modular PSUs and they will do as advertised.
Corsair has those nice new 80 Plus Platinum certified ones which is something OCZ is still lacking. If you can afford a $350~ PSU then the CORSAIR AXi AX1200i 1200W Digital looks pretty awesome.
yes but unless your pulling 600w from the wall as all times you wont ever see maximum efficiency. and just because your gpu can use 200w as max doesnt mean thats the amount it uses all the time. so actually using a smaller sized psu can result in better psu effeciency even if its not platinum rated.
