As for SPACE, you'd have to upgrade the storage just like you would for a PC.
Uninstalled games dont go anywhere, they are simply removed from the system just like a PC and reinstalled the same way.
Search for Disk Usage Analyzer and install that.
Open it up and you can see how much storage each file is using. You can delete files to open up more storage.
As far as unlimited GB, there is no such thing. You can install a larger nvme drive or a bigger microSD card.
Actually, for the bulk of games, they run just fine off an SD Card if you get a high performance SDCard.
Source: Most of my games run from an SD card on the deck, if you have a high performance SD Card, the GPU/CPU will bottleneck you long before data speed does.
