when hot it will run the fan at max til it cools down
On most laptops and GPUs a major threshold (fan curve) temp is 65*C or so, so when CPU/GPU reaches this in laptops, fan generally will crank up. Most games might push the laptop to run upwards of 80*C or higher in some cases. So yea when u do close a game, the temp will basically have to go back down to below 70*C or so before the fan will lower the RPMs again.
If u'd like to see your CPU/GPU temps and track them, I would suggest apps such as CoreTemp (for CPU), MSI Afterburner (for GPU as well as other useful features) and for something to view basically all the info, including voltages, fan speeds, temps; I suggest something like HWMonitor.
