you'll know if it hits 100% because it's usually accompanied by a major stutter, freeze, microstutters up the whazoo, etc.
Not all games work with overlays regardless, alternatives won't work in those cases because none are allowed
Regardless, if you just bought the system then unless it was poorly built and set up, there will literally be no performance issues so you have no reason to worry about trying to be able to stare at an overlay instead of actually trying to play the games you bought the system for

But yea MSI AB probably not good to use with AMD Adrenaline GPU Software.
You can still use RTSS by itself though. There other apps that work with that.
Detection Level = Low
Stealth Mode = On
Show own statistics = On
Then load up a game and see if displays properly.
You can control what else displays in the OSD via MSI AB Settings > OSD > select an option such as CPU or GPU Temp and enable the check mark next to its sensor name and tick the OSD box for it.
If extras display in OSD you do not want go back into MSI AB settings and uncheck the sensor name.
Don't suppose you happen to have spare monitor do you? I mean, I know it's not much of a solution, but just to get you out of a bind.
The Vector vs Rastor is the main setting that some games will require you to change so that RTSS or the OSD doesn't crash the game
