I would imagine you can update to Windows 11 pro directly by installing Windows 10 pro first and then going from there.

My pc is dual boot by accident. It came with 11 installed. I needed to keep 10 for app compatibility reasons so I installed 10 on a separate drive. Now when the pc starts I can select either o/s. No extra licence was needed.
You can use your customized icons in later versions of Windows 10 like 22H2 or Windows 11, they're very similar. You open Settings/Personalization/Themes?Desktop Icon Settings (have to scroll down). You can use the "browse" function to navigate to your folder of custom icons.
Windows 11 is not as customizable as 10 is. But custom desktop icons are def. doable--you can see various example by looking around and searching.

All I had to do on two of machine was press the go button in Windows Update, no hassle at all (well, aside from a bit of coaxing to get 10 to see the TPM after I re-enabled it…) :P
