I found a few cheap display port adapters on ebay for each port.

Sweet. Thought it was at least a $30 adapter.
So DP to VGA, HDMI to HDMI, and DVI to DVI should work? Any idea which DVI shares the HDMI port?

Scroll down and hit the specs tab. It says it can do up to 6 displays (with a displayport hub of some sort) so I assume it can also do 3 with all the pllugs that it's already got out the back.
Shouldn't be a problem, even my HD 6950 can do 4 just with it's built in plugs.
You will need a adapter for the VGA. Usually you get a free DVI to VGA adapter with your card. If not it shouldn't be more than a few $, like $5 at most I'd think.
