Depends on the games you play & your gpu, but some games particularly older titles would be able to hit 240fps. In that case, the upgrade in fps is quite nice & it is absolutely noticeable.
Personally, I don't care for ultrawide as 1440p on such a large display is blurry to me in comparison to 4K.
To answer your question, it would make a difference getting the highest refresh you can afford, just in case you ever play any games you could hit 240hz, but there is diminishing returns once you go above 240hz in particular. 165hz does seem low to me at this stage, especially since new GPUS will be coming out to better drive higher framerates easier.
However my real recommendation would be standard 4K OLED 240z with the QD-OLED glossy coating, anything above 240hz is really just for competitive gaming. 4K is much better than 1440p.

I have one of those monitors. Can't recommend it highly enough. Personally, I would have no hesitation buying another. I think the size of the monitor is more important than a few more fps.
for games, make sure gsync/vsync is enabled so it will lower the refresh rate to what the cpu/gpu can output, best of both worlds
less stuttering, not showing duplicated frames while the gpu is still working on the next waiting for next refresh cycle
While I get what you mean, going for a 4K monitor kind of goes against my idea since my GPU would need to push even more pixels than ultrawide already has, meaning that reaching the 240hz/fps mark would be even more impossible.
And yeah, older games sure, there I have no issues reaching 200fps+ (and I mean really old games or semi new ones which are actually optimized), but in the last few years, every tripple A game is horribly optimized.
Lets take the Silent Hill remake for example: great game, but optimized like trash.
Even 4090 GPU's Struggle to get over 40 FPS on 1440P.
I mostly have G-Sync off with my OLED monitor and TV for that matter, mainly because if you use HDR with G-Sync you get an annoying flicker, some don't notice it but it bugs the hell out of me.
if you adjust brightness/contrast correctly, you would not need it
